Ingredients

  • 3 tablespoons (38 g) granulated sugar
  • 1/4 teaspoon salt
  • 7 tablespoons (100 g) cold unsalted butter, cut into small pieces
  • 3 to 6 tablespoons ice water
  • For the apple filling:
  • 6 cups thinly sliced peeled apples (about 6 medium apples, 750 g sliced), preferably a mix of varieties
  • 3/4 cup (150 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • For the crumble topping:
  • 1/4 cup (30 g) all-purpose flour
  • 1/4 cup (20 g) old-fashioned rolled oats
  • 1/4 cup (50 g) packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/4 cup (30 g) chopped pecans
  • 2 1/2 tablespoons (35 g) unsalted butter, melted
  • To finish:
  • 1 egg white whisked with 1 teaspoon water

Steps

  1. Make the pastry: whisk the flour, sugar and salt in a bowl. Add the cold butter and quickly rub it into the flour with your fingertips until the pieces are about the size of peas.
  2. Sprinkle in ice water 1 tablespoon at a time, tossing with a fork after each addition, until the dough holds together in a ball without feeling sticky. The amount depends on your flour and the humidity.
