How we chose

We also aimed for a spread of styles and prices, from a Swiss stamped knife to German forged and Japanese-made blades.

What to look for in a knife brand

Decide between German and Japanese style. German-style chef’s knives tend to be heavier, with a bolster and a slightly softer, tougher edge. Japanese-style knives are usually lighter and thinner with a sharper angle, which makes them precise but less suited to heavy chopping.

Know forged from stamped. Forged knives are shaped from a single heated piece of steel and often have a bolster and more heft. Stamped knives are cut from sheet steel, so they are lighter and usually cheaper.

Check the weight and handle. A knife you use every day should feel balanced in your hand. Compare the stated weight and handle material, and think about whether you prefer a pinch grip on the blade or holding the handle.

Read the care instructions. Most high-end knives should be washed by hand and dried straight away. If you want dishwasher convenience, confirm the maker allows it for the exact model.

Buy from an authorized seller. Knife warranties often apply only to the original purchaser and to knives bought from authorized dealers. Check the warranty terms, including what is excluded, before you buy.
