How we chose

We compared individual chef’s, santoku and small utility knives listed at about $60 or less from established cutlery brands, looking at blade steel and stated hardness, edge angle, forged versus stamped construction, dimensions and weight, dishwasher guidance and warranty from the manufacturers’ pages. Where a manufacturer publishes no price or overall length, we used a major US restaurant-supply retailer for that fact. We did not test these knives hands-on.

What to look for in a budget kitchen knife

Start with one good main knife. A single sharp 8-inch chef’s knife or 7-inch santoku covers most daily prep. Add a small serrated or paring knife for tomatoes, fruit and bread rolls before you spend money on a full set.

Check hardness and edge angle. Manufacturers often list Rockwell hardness (HRC) and edge angle. Softer budget steel is easy to sharpen and forgiving, while harder steel holds an edge longer; a finer edge angle cuts more cleanly but needs gentler use.

Decide between stamped and forged. Stamped knives are lighter and cheaper, which many cooks like for quick prep. Forged knives with a bolster feel heavier and more solid, and the bolster helps protect your fingers.

Read the care instructions. Some budget knives are sold as dishwasher safe and others are hand wash only. If you know your knives will end up in the dishwasher, buy one rated for it, but hand washing and drying will always keep an edge sharper for longer.

Budget for upkeep. Even the best inexpensive knife dulls with use. A honing rod or simple sharpener and a wood or plastic cutting board will do more for everyday cutting than spending extra on the knife itself.
