How we chose

We have not tested these pots and pans hands-on. We compared the manufacturers’ information on capacity and diameter, materials and cooking surface, cooktop compatibility, oven limits and care. We chose pieces that build a useful kitchen one at a time instead of a large boxed set: a Dutch oven, a saucepan and a frying pan.

What to look for in pots and pans

Start with three pieces. A 5- to 6-quart Dutch oven for soups, braises and bread, a 3-quart saucepan for grains and sauces, and a 10-inch frying pan cover most recipes. Add pieces when you miss them.

Choose the surface for the job. Nonstick suits eggs and fish. Uncoated stainless steel browns well and builds pan sauces. Cast iron holds heat for searing but is heavy and needs drying and oiling. Enameled cast iron needs no seasoning.

Check your cooktop. Induction needs a magnetic base. Every pot and pan here states its cooktop compatibility; confirm it for the exact size you buy.

Oven and broiler limits. An oven rating does not always include the broiler. Check the manufacturer’s instructions before you put a pan under the broiler.

Frequently asked questions

Should I choose a Dutch oven or a saucepan?

The selected Dutch ovens suit braises, stews and stove-to-oven meals, while the 3-quart Tramontina and All-Clad saucepans suit sauces, grains and smaller soups. Choose by the recipes you cook most often, then consider the weight and storage space of cast iron.

What pot size should I choose for larger batches?

Among these picks, the Lodge holds 6 quarts, the Le Creuset 5.5 quarts and the STAUB 4 quarts. Both saucepans hold 3 quarts. Larger capacity helps with family batches, but filled cast iron is substantial to lift; a saucepan is not a stockpot substitute.

Can these pots go on induction and into the oven?

All five selected pots list induction compatibility and can go into the oven. The All-Clad D3 saucepan lists 600°F including the broiler. Le Creuset, STAUB, Tramontina and Lodge list 500°F, and STAUB is not for the broiler. Confirm broiler use for each pot rather than assuming an oven rating includes it.

Do enameled Dutch ovens need seasoning?

No. Enameled cast iron is not seasoned like bare cast iron; STAUB states this for its black matte interior. Gentle temperature changes and suitable utensils still matter. Hand washing is recommended for the Le Creuset, STAUB and Lodge Dutch ovens, even where dishwasher use is allowed.

Should I choose nonstick, stainless steel or cast iron?

All-Clad HA1 and GreenPan Valencia Pro suit eggs and gentle everyday frying, with different nonstick surfaces: PTFE and ceramic. Made In and Misen provide uncoated stainless steel for searing and pan sauces. Lodge offers seasoned cast iron for browning, with more weight and drying-and-oiling care.

Which selected frying pans work on induction?

All five: the All-Clad HA1, GreenPan Valencia Pro, Lodge Classic skillet, Made In and Misen pans list induction compatibility. Confirm the exact size and version when you buy.

Can an oven-safe frying pan go under the broiler?

An oven rating alone does not establish broiler permission. The All-Clad HA1 lists a 500°F oven limit and specifically excludes broiler use. GreenPan lists 600°F, while Made In and Misen list 800°F. Check the exact pan's instructions for broiling, accessories and any additional restrictions.

How does cleaning differ between these frying pans?

All-Clad recommends hand washing the HA1 with silicone, nylon or wooden utensils, although it is dishwasher safe. GreenPan also recommends hand washing. Lodge needs prompt drying and light oiling after washing. Made In prefers hand washing; Misen lists dishwasher compatibility. Let pans cool and follow each model's care instructions.
