What to look for in a kitchen thermometer

Match the type to the job. Instant-read thermometers check temperature in seconds and then come out. Leave-in probes stay in a roast or pot and alert you at a set temperature. Clip-on candy thermometers stay in hot sugar or oil, and wireless probes let you monitor from another room.

Look at stated accuracy, not just display resolution. A display that shows tenths of a degree is not the same as being accurate to a tenth. Check the accuracy tolerance the maker publishes, and whether calibration can be checked or is certified.

Check the temperature range. Meat thermometers mostly work below 212°F, but candy and frying need readings well above 300°F. If you plan to leave a probe in the oven, make sure the probe and cable are rated for oven heat.

Consider water resistance and cleaning. Probes get messy. A water-resistant rating means you can rinse it more easily, while many basic models should only be wiped. Never put a thermometer in the dishwasher unless the maker says it is safe.

Think about power and convenience. Note the battery type, whether batteries are included, and features like auto-on, backlights, magnets and alarms. Wireless models also need charging and usually an app.
