Quick Classic Tomato Soup

On a dreary day there’s nothing quite as comforting as a bowl of tomato soup and a grilled cheese sandwich. I’m not sure what it is about it, but it just hits the spot. It must be some lurking childhood memory that brings up those cozy feelings as soon as my spoon dips into the vibrant red puree. To me, this particular tomato soup tastes just like the canned soup of my youth – creamy, a tad sweet, with the flavour of tomatoes really shining through.

And, it’s pretty much just as fast. You simply dump the ingredients into a pot, simmer for 5 minutes, puree, and serve. It doesn’t get much simpler than that.

This is our favourite homemade tomato soup to date. I’ve been making it for probably a year now but we always gobble it up before I can snap any pics. Last week I made some when just me and Alli were at home, so I took some pics, and then used my lunch box tip of tucking the rest in the fridge, for the boys, for lunch the next day. That way we all win. 🙂

Quick Classic Tomato Soup

Makes: 4-6 servings

Ingredients
  • 2 (28 oz) cans diced tomatoes
  • 2 tablespoons honey
  • 1 cup vegetable or chicken stock
  • 1/4 teaspoon hot sauce
  • 1/4 teaspoon worcestershire sauce
  • 1/4 cup cream cheese spread
  • salt and pepper, to taste.
Instructions
  1. Place tomatoes (with juices) into a medium sized pot, along with honey, stock, hot sauce, and worcestershire sauce. Bring to a boil, lower heat and simmer for 5-10 minutes. Stir in cream cheese until melted. Puree with a handheld blender (or allow to cool a bit and then process, in a blender, in several batches) until smooth. Taste and season with salt and pepper.
