Coconut Key Lime Pie Popsicles
We moved to our house just over a year ago, when it was still packed under a few feet of snow. As the snow started to melt it unearthed a yard the likes I had never seen. It was a disaster. Last summer we spent most of our time just getting rid of all the garbage and junk, and making sure that the place was kid friendly and that I could get a garden planted. This year we plan to take more time to actually make the place look attractive. It is overgrown with weeds and bugs, and it’s about time someone whipped this place into shape!
So, that’s how we spent our glorious sunny May long weekend. Doing yard work. It is actually one of my favourite jobs to do. Digging in the dirt and enjoying the results of your efforts in the beauty that is revealed. I find it very rewarding. And, after a morning and afternoon of yard work there is nothing more refreshing then a hard earned popsicle. As Max soon learned, as he was a big help this weekend.
Refreshing, tart, creamy and tropical. These popsicles will make you pucker in the best way. I love that the coconut milk gives these such a creamy mouthfeel, and that the popsicles do not freeze completely solid. You can actually bite these and not worry about cracking a tooth. The final product is very smooth with very little crystallisation.
These also happen to be dairy free, gluten free and processed sugar free – making them a huge crowd pleaser. The toasted coconut makes a bit of a mess but in my opinion adds such great flavour. And, if you’re enjoying these outside, as is the best way to enjoy a popsicle, a few coconut crumbs aren’t such a big deal anyway. 😉
Coconut Key Lime Pie Popsicles
Makes: 10 (2 oz) popsicles
Ingredients
- 1 can full fat coconut milk
- 1/2 cup lime juice (key lime or regular)
- 1/4 cup honey
- 1 teaspoon lime zest
- 1/2 teaspoon coconut extract
- 1/3 cup shredded unsweetened coconut, toasted
Instructions
- In a 4 cup measuring cup with a spout, whisk together coconut milk, lime juice, honey, lime zest, and coconut extract until smooth. Pour into popsicle molds. Sprinkle with a layer of toasted coconut. Insert popsicle sticks. Freeze for 4 hours, or until firm.

Thanks June! 🙂 They make them a little more difficult to eat but they are darling. Max kept asking for the ones with the “picture of a lime on it”. Lol. A little tip if you give it a try: I had to push them against the side of the popsicle mold after they were filled to get them to stay in place, otherwise they floated in the centre and you couldn't see them. 😉
