It’s Monday. And, you’re either going to love me or hate me for this, but I really thought that Monday could use a little pick me up. I’m sorry to do this to you. And yet, not really. There is simply too much deliciousness going on in these brownies to not share them with you. Especially on a Monday.

Last weekend my hubby requested cookies, but before I could make some I saw these brownies on Rachel’s blog. I decided to make them instead, knowing that they would be better then any cookie he had been hoping for. I was so right.

Fudgy brownies topped with crisp and chewy chunks of cookie dough with melty chocolate chips throughout – Rachel you are brilliant! These are definitely our new favourite brownie.

We froze them pretty much right away just so they wouldn’t be so easily accessible. The only problem is, now they’re sitting in our freezer just waiting to be nabbed anytime a craving hits. Which happens often. It’s a good exercise for my willpower. That’s the power of a good brownie for you – it builds strength of mind.

Layered Chocolate Chip Cookie Brownies

Cookie Dough
  • 5 tablespoons unsalted butter, softened
  • 3 tablespoons brown sugar
  • 3 tablespoons granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 3/4 cup semi-sweet chocolate chips
Brownie
  • 1/4 cup unsalted butter
  • 3 oz bittersweet chocolate
  • 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoon unsweetened cocoa powder
  • 5 tablespoons all-purpose flour

For the cookie dough: Cream together butter and sugars, in a large bowl. Mix in egg and vanilla. Add baking soda, baking powder, salt and flour; mix well. Stir in chocolate chips until evenly distributed. Set aside.

For the brownie: Place butter and chocolate in small saucepan set over medium-low heat, stir constantly until chocolate is melted and mixture is smooth; remove from heat. Whisk in sugar, egg and vanilla. Whisk in cocoa and salt. Stir in flour until evenly combined.

To assemble: Scrape brownie batter into an 8×8 inch baking pan that has been lightly greased and lined with parchment paper; smooth top. Top with chunks of cookie dough, as evenly as possible. Bake at 350ºF for 25 minutes, or until cookie layer is set and lightly browned.

Let cool completely before removing from pan to slice.

Makes: 9-12 servings

Fudge Brownies with Salt Roasted Pecans

Hi friends! I hope you didn”t think I”d forgotten about you!

After what feels like forever, we”re finally settled in our new place. We didn”t have any internet for most of last week, which is why the blog was rather quiet. But, I did get my first ever garden planted – I even have the bright red sun burn to prove it!

I can”t believe how much our lives have changed over the last little while. We went from a view like this:

Only a little change…

To make up for my week of silence, I made you brownies. Fudgy, gooey, rich brownies. With little pockets of salt roasted pecans to help offset the uber chocolatey-ness. It is one delicious combination.

To ensure fudgy brownies every time it”s important to do two things 1) Don”t over-bake the brownies. A toothpick inserted in the centre should have a few fudgy crumbs stuck to it. If it comes out clean it”s been in the oven too long. To avoid this, check on the brownies well before the recommended time. 2) Don”t over-beat the batter. If you beat the batter too much it incorporates too much air and you”ll have a cakey brownie instead of a fudgy one. To avoid this, mix the batter by hand just until the ingredients are incorporated.

This is one brownie that gets better with age, so if you can bear the wait, make it the day before you plan on serving it.


Fudge Brownies with Salt Roasted Pecans

Salt Roasted Pecans

  • 1 tablespoon unsalted butter
  • 1 cup pecans
  • 1/2 teaspoon sea salt

Melt the butter in a small skillet over medium heat. Add the pecans and salt. Cook, stirring often until the pecans have a toasted aroma. Remove from heat and set aside to cool.

Brownies

  • 4 oz unsweetened chocolate, chopped
  • 1 1/4 cups unsalted butter, cut up
  • 1 cup white sugar
  • 3/4 cup packed brown sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder

Melt together chocolate and butter in a medium sized saucepan, over medium heat. Remove from heat; whisk in sugars. Whisk in eggs, one at a time, until evenly mixed. Stir in vanilla. Stir in flour and cocoa powder.

Remove 12 pecans from the skillet and set aside. Chop remaining pecans and stir into brownie batter. Pour the batter into a greased 8×8 inch baking pan. Top with the reserved pecans.

Bake at 350º for 25 minutes, or until the top looses it”s shine and a toothpick inserted in the centre produces fudgy crumbs. Let cool at least one hour before serving. Store covered, at room temperature, for up to 5 days.

Fudgy Peanut Butter Chocolate Chip Brownies

This is my ULTIMATE favourite brownie recipe. Every time I make it I am in awe again of just how good it is.

Often I find brownies to be overly rich and sweet. But, these have the perfect fudgy consistency with that great peanut butter/chocolate combo that everybody seems to love. And, for those chocoholics out there it will definitely satisfy your sweet tooth as it is packed full of chocolate chips.

The key to perfect brownies is to NOT OVER-BAKE them. Make sure to check early and wait for the toothpick to come out with fudgy (not wet) crumbs. If it comes out clean they will no longer be fudgy!

  • 1/2 cup peanut butter
  • 1/3 cup butter, softened
  • 2/3 cup white sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

  1. Cream together butters. Beat in sugars, eggs and vanilla. Stir in flour, baking powder and salt until evenly blended. Fold in chocolate chips.
  2. Spread into a greased 9×9 or 7×11 inch baking pan. Bake at 350ºF for approximately 30 minutes or until toothpick inserted in centre comes out with fudgy crumbs. Allow to cool before slicing.

Makes: 12 servings
