Ok, so these are a little hard for me to classify as a recipe because they are just so simple. But they’ve become my obsession this summer and I couldn’t stand to keep this delicious and refreshing combination from you. Cantaloupe is so deliciously sweet right now that it really doesn’t need much to make me want to eat it non-stop. Add a sprinkling of tart raspberries, some vanilla Greek yogurt and a drizzling of honey and you have one satisfying and healthy summer dessert. To me this isn’t a “I’m going to force myself to eat fruit for dessert because it’s healthy”, it’s a “this tastes so darn good I want to eat it every day for the rest of my life (or summer)”.
I would never have thought to put cantaloupe together with yogurt, but one day we had the two lying around and I decided to try it on a whim. I was immediately smitten. There is something about the fresh, sweet, floral cantaloupe that melds so perfectly with the creamy yogurt. It tastes so refreshing and yet almost decadent.
For me homemade yogurt makes all the difference. The flavour is just so much better, and in this application it seriously tastes like whipped cream, but you get the benefit of probiotics and a lot less calories. Even my raspberry disliking, yogurt wary, sweet loving husband is more then happy to have this for dessert numerous nights in a row. And that is pretty near a miracle if you ask me. I know we will continue to enjoy this for the rest of the summer and I hope you give it a try soon.
Melon Berry Dessert
This is a basic guideline but really, this recipe needs no measurement. Feel free to give and take as you please.
- 1/2 cantaloupe, cubed
- 1/2 cup raspberries
- 1/2 cup Greek yogurt
- 1 teaspoon vanilla
- honey, to taste
Divide cubed melon equally between four small bowls. Stir together yogurt and vanilla. Top melon with 2 tablespoons yogurt each. Sprinkle with raspberries and drizzle with honey.
