		<description>Yes! This has happened to me before. It is most likely from over-mixing. Although you can use electric mixers, it is very easy to over-mix with them. Not sure if that is what you used? 		<description>so i tried these, and they turned into a rubbery blob. i can seriously remove the entire potato mass by inserting my wooden spoon and pulling.  Any ideas why?

the only differences is i used yukon gold potatoes, which i peeled. they got toasty brown on the outside, and that new &quot;skin&quot; i actually removed b/c i was afraid of adding too much of that tougher texture.</description>

My mom always said that potato skins have so many nutrients, but I&#039;ve never liked them...and mashed potatoes you don&#039;t usually get them...so this is a great idea!
