This has been a bit of a crazy week. The weather has been switching between spring and winter pretty much every day. I wish it would stop teasing us already and settle down into spring. I know that, that is how it has been for most of you lately. What a crazy year for weather.
We finally found a grocery store nearby so now I don’t have to take the train every time I want to pick up something. Which is very nice. It reminds me of Fort when I walked pretty much every day to the grocery store to pick up a couple of items. I like it that way. Me and Max are going to head over there this afternoon and pick up some things for the weekend.
We have all been very tired this week. I am not exactly sure why. Max has been sleeping very well at night. Must be the weather! Isn’t that what we always blame everything unexplainable on?
These are the yummy cookies that I made last friday, and that we photographed on my birthday with some of my new toys. They were so good and stayed nice and soft for days, right up until we finished them off. I figure they have to be good for you because they are full of peanut butter. That way you are getting some protein with your sugar! They are a nice chewy cookie, which is something I find rare in a peanut butter cookie. I think it must be the oatmeal . And, I personally always prefer my cookies soft. But, that is just because that is how my Mother made them. The cookies are very good on there own, but the filling definitely brings them to another level. I was hesitant when I tasted the filling on it’s own but, in between the cookies it is bliss. Sweet and salty, just how I like it!

Peanut Butter Oatmeal Sandwich Cookies
adapted from Allrecipes
- 3/4 cup flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 cup quick cooking oats
- Cream together butter, peanut butter, sugars, and vanilla. Add egg and beat well.
- Combine flour, baking soda, baking powder, and salt. Mix into creamed mixture. Add oatmeal and combine.
- Drop by rounded teaspoons onto greased baking sheet (roll them into balls for a more uniform shape), and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 for 7-8 min. or until cookies are a light brown. Let sit for a couple of minutes on the baking sheet and them remove to a wire rack or paper towel to cool.
Peanut Butter Filling
- 3 Tbsp. butter, softened
- 1 cup powdered sugar
- 1/2 cup peanut butter
- 2 Tbsp. milk
- Cream all ingredients together. Spread onto one cooled cookie and top with another. Put in your mouth.
Makes approx: 4 dozen small cookies





Mmmmm…wish I could head over to your place for cookies & milk!:) I can't even make them now:(…my oven is toast! I guess I'll just have to enjoy the pictures for now…they definitely make them look scrumptious!

I love the site, Cheri! This recipe is really good. I made them today and they turned out great. The only thing I did different is that I only added about 1/4 cup icing sugar to the filling, as the peanut butter I was using is quite sweet already .Thanks a lot for sharing these :)

We love these cookies! I must make them twice a week for sure but we add chocolate chips and forget the filling… they were too hard for our kids to keep together. Thanks!
