Our weekends usually consist of a movie night. And no movie night is complete without snacks, preferably popcorn. I’m not sure why but I’ve never been a huge fan of caramel popcorn. I love caramel and I love popcorn but the two together for me is just kind of, meh. I do love me some peanut butter popcorn crunch, but it’s pretty sugar loaded and I consider it a once a year kind of treat. So, it was time to create something a little bit healthier but just as sweet and delicious.
I had quite a few trials and errors with this concept before I got the results I wanted. But succeed I did. This popcorn sets nicely on the outside (so no sticky fingers) but also has a nice caramely chew. It has a little bit of salt to cut through the sweetness and tastes exactly like what the title says – peanut butter and honey caramel. Delicious and addictive. At heart I’m a salted butter popcorn kind of gal but when I’m craving something sweet you can bet this is what I’ll be making.
Peanut Butter Honey Caramel Popcorn
- 1/3 cup popcorn
- 6 tablespoons honey
- 1/2 teaspoon vanilla
- 1/4 cup peanut butter
- 1/4 teaspoon salt
Pop popcorn in desired fashion.
Place honey in a small saucepan. Bring to a rolling boil, continue to let it boil for 3 minutes (if the honey starts to brown, remove it immediately). Remove from heat, stir in vanilla, peanut butter and salt. Pour over popped corn. Toss with a wooden spoon until evenly coated (do not use your hands, the honey mixture is very hot). Allow to cool until set before serving.
