		<description><![CDATA[Hi Ryan. I only use 1/2 cup of this mix for about 1 pound of chicken. I store the rest in the cupboard to use at later dates. :) The cornflakes grind up much finer then the panko crumbs are when you purchase them. I would crush the panko crumbs more or put them through the processor and then measure the 4 cups. Also my chicken is always quite damp when I coat mine but you can give it a quick rinse under water to help stick, or like you said, coat it in some whisked eggs first. I never flip mine but I think that the cornflakes stay crispier then the panko would. If you want to keep using panko then I would bake them on an oven-proof cooling wrack set over a baking sheet so that the air can circulate underneath and crisp up the bottom as well. Hope all this helps! I&#039;ve botched up many a simple recipe myself. ;)]]></description>

I still had two cups (or more) of breading left in the bowl. So I think if you use that substitution you can get away with two cups. Whole Foods was also out of beef boillon cubes so I used &quot;Not-Beef&quot; bouillon, still tasted awesome.Also, not a lot of breadcrumbs stuck on the chicken - enough, of course, but without an  adhesive such as egg whites I wonder if I&#039;m doing something wrong. Also, I baked this on a ridged baking pan and the underside was good but had some slightly soggy areas. Should I flip it halfway through?(Trust me to take a simple recipe and botch it).]]></description>

		<description><![CDATA[It will stay good for a very long time in the freezer. Not sure how long, but I&#039;m sure you would use it up before it would ever go bad. I store my in my cupboard for a couple months and it stays fine, there&#039;s nothing in there that should go bad very easily. You can use it straight from the freezer as there&#039;s no water content and it shouldn&#039;t stick together. Enjoy! :)]]></description>
