Sunday night I witnessed the worst storm I have ever experienced in my life. I woke up at 12:30 to the sound of my son crying. As I was warming up his bottle I noticed the sky flashing in a constant rhythm. Figuring it was the STARS helicopter landing on its nearby pad I continued droopily to my sons room to feed him. The power went out abruptly and an eerie feeling crept up my spine. The constant flashing continued and I tried to squelch my fear so that Max would not be alarmed. (We had been having Tornado warnings and there had been a horrific storm nearby that had killed a couple people the day before.) After I was done feeding Max I decided to go outside and take a look. The entire sky was lit up almost constantly with flashes, but it was dead silent out. The eerie feeling I had would just not go away so I decided to wake up James. He too decided to take a look outside but this time the atmosphere was quite different. We could hear in the distance a rushing noise that was coming closer, and it seemed to be nearing fast. I hurried inside and woke up my parents, wanting to err on the cautious side. As we stood by the dining room window we were startled by a loud crack against the window in front of us, which was quickly followed by many more, building in strength with each one, so much so that we were convinced it would break through the windows. I ran to get Max who had awoken from the noise and rushed him downstairs. There we sat with no power, the wind howling, listening to the sound of the hail beating against the house. The worst was over quite quickly and we were able to go back upstairs and watch in awe  the amazing storm that was before us.

It was not until the morning that we saw the full extent of the damage. My parents car, and motor-home received major hail damage with the hail actually breaking through the screen on the windows of the motor-home. And, the house and ground were plastered with leaves and branches. But, we were lucky. Many people lost their crops, had windows broken out of their homes, punctures through the siding of their houses, and cars ruined by the sometimes baseball sized hail. But, fortunately there were no fatalities that night. My heart and prayers go out to those who lost loved ones in the earlier storms.

Consequently, it was a cool 5 degrees outside today and quite cool yesterday as well. Yesterday was my first day off in a long time, so I figured with this cooler weather it was the perfect time to do some baking and use up our blueberries before they went bad. These muffins are light, fluffy and a great pick me up. My husband who does not usually like muffins had two in one sitting. That is really saying something. They may not fix all the damage that was caused by the storms in the last couple days but they do offer some comfort on a cold and rainy day.

Blueberry Sour Cream Muffins

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1/3 cup oil
  • 1 egg
  • 1/3 cup milk
  • 1 tsp. vanilla
  • 1/2 cup sour cream
  • 1 cup blueberries
  • streusel topping * recipe to follow
  1. Stir together flour, sugar, salt and baking powder.
  2. In a separate bowl mix oil, egg, milk and vanilla. Stir into flour mixture. Add sour cream and stir until combined. Fold in blueberries.
  3. Spoon batter into 12 greased or paper lined muffin cups. Sprinkle generously with streusel topping and bake at 400 for 20 min.

Makes: 12 muffins

Streusel Topping

  • 1/3 cup flour
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • pinch nutmeg
  • 2 Tbsp. butter
  1. Mix together flour, sugar, cinnamon and nutmeg. Stir in butter until evenly coated.

Makes enough for 12 muffins
