Oh, have I got something yummy for you today! We’ve been making these parfaits ever since fall first hit, but we’ve been too busy inhaling them for me to even think about snapping a picture. Imagine, all of the deliciousness of apple crisp in a healthy yogurt parfait – it’s nearly impossible to keep your spoon out of it!
First you cook down some apples with cinnamon and honey, then you layer it with thick Greek yogurt and crisp granola. Seriously, it’s so simple. And, comforting. And, delicious. Plus, it tastes like dessert but is healthy enough for breakfast. It can be a bit of a chore to get Max to eat yogurt sometimes (he’s not as big of a fan of it as me and Alli are) but whenever I serve it this way there are absolutely no complaints, just large smiles and satisfied tummy’s. Apple crisp yogurt parfaits = major win all around.
Apple Crisp Yogurt Parfaits
I like to leave the skin on for more nutrition but feel free to peel the apple if you prefer. Use gluten-free granola if making gluten free.
- 1 large (or 2 small) apple, cored, and chopped
- 1/2 tablespoon unsalted butter
- pinch salt
- 1 tablespoon water
- 1 tablespoon honey
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pure vanilla extract
- 1 cup Greek yogurt
- 1/2 cup granola
Place apples, butter, salt, water, honey, and cinnamon in a small saucepan set over medium heat. Cook, stirring often, until apples have softened. Remove from heat; stir in vanilla. Allow to cool to room temperature. Layer with Greek yogurt and granola to serve.
Makes: 2-4 servings
